At first, Betty was dismayed that the food was vegetarian; but soon she became delighted with Kancha the cook’s daily offering. For three weeks she worked with Kancha in his “smoked-filled kitchen”, and here she presents the best of his recipes, developed over the years to satisfy the Westerners who come to Kopan to do meditation courses and retreats.
